It is almost a classic combination of ingredients, but in this baked version it tastes like a completely new dish. What could be wrong about a combination of chicken, spinach, mushrooms, rice and cheese, right?
You
can also replace rice in the recipe, for example with couscous or
quinoa. You can also cook it before baking, but in this case the food
tastes more like casserole because the rice becomes firmer after
baking. Therefore, I recommend baking it raw and poured over with
enough broth. Then you just have to wait until it has taken up all
liquids and the food is ready. The chicken breast is also
irresistibly juicy in this form, and melted cheese with spinach and
fungi gives the court a completely new taste dimension.
Ingredients:
- 600 g chicken breast
- 300 g mushrooms (e.g. mushrooms)
- 300 g of frozen spinach leaves
- 150 g grated Mozzarella (reduced fat)
- 600 ml of vegetable broth (or water)
- 200 g brown or other rice
- A spring onion - 1 teaspoon of salt
- 1/2 tsp ground black pepper
- 1 tablespoon of garlic spice

1. Pour the rice onto the bottom of a baking pan (approx. 30x25 cm) and salt lightly. Pour the vegetable broth over the rice (if it is salted, the rice does not have to be salted) or water.
2. Mix the thawed spinach with finely chopped mushrooms and chicken meat, grated mozzarella, salt and spices.
