Ingredients (4 servings):

  • 250 g whole grain lasagna sheets

  • 400 g ground turkey or chicken

  • 1 zucchini

  • 1 carrot

  • 1 bell pepper

  • 1 onion, 2 cloves garlic

  • 400 g tomato passata

  • 200 g low-fat cottage cheese or ricotta

  • 100 g reduced-fat shredded cheese

  • olive oil, salt, pepper, oregano, basil

Preparation:

  1. Sauté onion and garlic in a little olive oil.

  2. Add ground meat and cook until crumbly.

  3. Add chopped zucchini, carrot, and bell pepper, cook briefly.

  4. Stir in tomato passata, season with herbs, simmer 10 minutes.

  5. Layer lasagna sheets, meat-vegetable sauce, and cottage cheese in a baking dish.

  6. Top with shredded cheese.

  7. Bake at 180 °C (350 °F) for 35–40 minutes.
